Meal plan for the week

Got a bit too much sun during Burrito Day, so I ended up sleeping the afternoon away. Still, I like posting the meal plans on Sundays, and it helps me remember to put enough veggies in our meals, so even though I’m late with it, here it is:

Today (Sunday): I had a tomato sandwich on what might be my best white bread ever. Recipe follows.
Monday: Kalua pig (post on its way), green salad
Tuesday: Falafel, baba ganouj, cucumber salad
Wednesday: Steak, tomato salad, and garlicky crumb-coated broccoli
Thursday: Some kind of quick curry with lots of veggies in it, rice
Friday: Spaghetti with tomato sauce; steamed veggies
Saturday: Bean burritos with guacamole and fresh salsa

Basic white bread with milk

300 g milk
500 g all-purpose flour
30 g sugar
9 g salt
7 g yeast
30 g butter

If using bread machine to knead, place into your bread machine according to manufacturer’s instructions, and use “dough” setting. Otherwise, do whatever you usually do to knead bread; no need to pre-mix anything. This has worked fine for me with a stand mixer or by hand. Allow to rise the first time in bread machine or oiled bowl, until doubled in size, then shape and put into a greased loaf pan. Let rise again, 30-45 minutes or until doubled and a finger poke doesn’t spring back, then bake 35 minutes in a preheated 350°F oven.
