Had a talk with James. Every year, as Spring blossoms and the weather changes, we start talking about lightening things up around here, foodwise. This winter, maybe more than others, we kind of got into a slump of eating really heavily. We’d both like to switch that up for a while, so we sat and brainstormed our very favorite healthful meals: things that are mostly vegetarian; full of whole grains, legumes, fruits, and veggies; and actively yummy to us.

We’re not much for deprivation, James and I. When we start feeling sluggish, we don’t think, “Eek! I should eat less!”, we think “Oh, man, let’s have a gigantic fruit salad with the peak strawberries we just bought!” It’s a good approach for us, and we came up with this basic weekly menu plan to use as a template. Where the “lighter” part comes in isn’t in the heartiness of the meals, because we like heartiness. It’s that we go much easier on the meat, which really just requires that we lay off of the big chunks of meat and cheese that have been our mainstays this winter and early spring.

Mondays: Burritos / tacos / chili / beans and rice
Tuesdays: Farmer’s pie / chickpea gravy & potatoes / potato soup
Wednesdays: Udon / yaki soba / sushi / kimchi soup
Thursdays: Sandwiches (any kind, incl. sloppy joes, caprese, etc.)
Fridays: Spaghetti / pizza / focaccia
Saturdays: Curry with rice / Ethiopian food
Sundays: Stir-fry with rice or noodles

(All meals with lots of veggies; whole grains preferred)

So here’s this week’s plan (not counting tonight, which will be roasted root veggies and a little bit of leftover ham for James for protein).

Monday: Bean burritos
Tuesday: Farmer’s pie and salad
Wednesday: Whole-grain udon with seitan and veggies
Thursday: Sandwiches and salad
Friday: Spaghetti and steamed veggies
Saturday: Coconut curry with tofu & brown rice
Sunday: Stir-fry with noodles
